You presented a fine selection of apps, James.
A companion app (more or less) to The Guardian Eyewitness is "Life", IMO. Viewing the historical black and white Life magazine photos is a treat.
Another companion app to Tapose or My Brushes is "Paper". If one buys the inexpensive optional brushes, this little sketch pad app is quite impressive.
As you have pointed out repeatedly, the iPad is a great platform to view information or content from numerous sources. Some of the following apps are at the top of their class, so to speak, in presenting their content to the viewer.
Minds of Math (a timeline of every important mathematician in history), Man in Space (somewhat self explanatory), Back in Time (a historical timeline), PADD (for all the Trekers - or Trekies - amongst us), Leonardo - one of the most visually stunning and informative presentations of Leonardo da Vinci's works, Boeing (a yearly timeline of aeronatical achievements by Boing and it's affiliated companies), Smithsonian (Videos from the TV shows) and MyCongress - a very useful app to locate, identify and provide links to your Local and State elected officials.
The truly revolutionary feature (at least from my personal experiences) for the "Post PC" era of mobile devices is the relatively low purchase price for quality software applications that operate on them.
It really is the "Golden Age" of public access multimedia informational content.
