I don't think they care whether the resulting services are volunteer or paid - they just want a smaller government.
I think most Republicans would be fine using privately owned services rather than purely volunteer services.
Anyways, back to your point - I don't think that asking to be paid is too much to ask.
As to whether volunteering is anti-capitalistic?
Well, it's a tough issue. On one hand, no they don't seem to be anti-capitalistic. Volunteers work fine in a capitalistic society. Many volunteer organizations are very successful working in a mostly capitalist system.
On the other hand, they're not terribly pro-capitalistic, either. They don't follow the standard pattern that many people would describe as "capitalism." They don't make much of a profit, if at all. Often their resources are limited: A volunteer organization often doesn't have a reliable source of income.
Truth be known - a volunteer organization is only as reliable as the people who volunteer their time and/or money to the organization. Sad to say, more people than not do not volunteer their time and/or money. So a volunteer organization is by nature far less reliable than a a for-profit organization.
