The two most basic responses to this kind of threat are to:

1 - cross train all of your people while assigning everyone primary responsibility for something; and,

2 - establishing at least two data centers with different management set up to ensure that data is stored at both sites and the system as a whole continues to work even if one is completely destroyed.

One odd thing: as we get into TB database sizes and life/death corporate data values it's becoming increasingly obvious that we're going to have to move to triple redundancy for this - just as people making the larger DBs are now starting to offer 3-way mirroring.
