According to the Electronic Times Internet, Sharp was unable to pass muster with Apple over mass production issues. Instead, Samsung started building panels in December and LG has joined it in production this month.
What that means is Sharp's IGZO technology will not be powering the rumored retina display with 2,048x1,536 resolution. That tech, which uses indium, gallium and zinc, could have potentially made the iPad thinner, but perhaps it had yield issues that led Apple to keep using IPS technology for its screen.
While a bummer for Sharp, presumably nothing can stop the Apple bullet train once it decides that new iPads need to start being churned out.
