iTunes 9.1.1 squashes VoiceOver bugs
iTunes 9.1.1 was released via Software Update which fixes some VoiceOver and AAC conversion bugs in addition to the obligatory stability and performance improvements.

- Several stability issues with VoiceOver
- A usability issue with VoiceOver and Genius Mixes
- Issues with converting songs to 128 kbps AAC while syncing
- Other issues that improve stability and performance
I installed it, but noticed nothing different because I don't VoiceOver. It's also worth noting that iTunes 9.1.1 doesn't have any security content according to the Apple Security updates knowledgebase article.
I typically wait as long as possible before installing software updates, unless they're security related. Do you install these types of updates, day and date of release, or do you wait a few days before installing incremental updates like this?
